Job Summary

 

Directly responsible for the daily supervision of all food service employee and the preparation and delivery of all catering events. Ensures the provision of optimal nutritional care and quality by utilizing cost effective and innovative management techniques in compliance with all regulatory standards. Duties include menu development in accordance with regulatory guidelines, food selection, oversight of meal preparation and delivey, cost and inventory controls, and staff management.


Essential Job Duties & Responsibilities

Menu Development and Meal Planning

 

  • Establishes connections with responsible parties and key staff members to understand the dietary needs of consumers (e.g. allergies and/or restrictions) and ensure proper
    selection, preparation and delivery of meals.

  • Determines the preferences of consumers regarding food likes and dislikes.

  • Works with Director to develop catering menus for in-house meetings, events, and general catering needs.

     

    In-House Catering

     

  • Produce, using scratch cooking methods, all catering food items including but not limited to Health and Wellness, YOU, AO Box Lunches, Early Learning and EHS box and catered lunches as well as all internal and external catering events.

  • Assists with all catering operations including preparation, transportation, setup, operation, and clean-up of all events.

  • Utilizes established order-to-delivery process and tools for catering services.

  • Helps to designs and implement creative in-house catered events.

     

    Supervision

     

  • Supervises kitchen and delivery staff to ensure development and maintenance of pleasing and nutritious meals and incorporation of consumer preferences.

  • Actively teaches food presentation techniques and best practices for food preparation and meal delivery systems.

  • Ensures that all prepared food items are stored and labeled properly and meet funder requirements.

     

    Quality and Compliance

     

  • Ensures staff adherence to regulatory guidelines for sanitation of kitchen surfaces and equipment, safe food handling and storage, and appropriate personal attire.

  • Guides and promotes safe work performance by developing safety systems, policies and procedures, communications and recognition for subordinates.

  • Executes exemplary customer service to drive satisfaction.

     

    Continuous Improvement

     

  • Works with Director to address and improve structure and operations of the food preparation processes and service delivery systems.

  • Encourages the identification of ways to improve consumer enjoyment of services through potential accommodations and food presentation.

     

    Administration

     

  • Collaborates with Director to determine menu costing, sourcing, and supplier contracting.

  • Completes a weekly financial planner to ensure that budget is being met for catering cost.

  • Codes and submits invoices to finance.

  • Orders all food, sanitation and packaging equipment. Maintains inventory according to par levels.

  • Monitors and maintains accurate and timely records of individual allergies and dietary restrictions.

  • Supervisors all food service staff daily times and checks out staff at end of shift.

     

    Other Job Duties & Responsibilities

     

  • Aids in monitoring the care and operation of delivery vehicles and all kitchen equipment.

  • Provides assistance to delivery order preparation and delivery as necessary.

  • Other duties as assigned.

    Job Qualifications

     

  • High School diploma or equivalent with 2-4 years of relevant work experience in lieu of education
  • ServSafe Food Protection Manager certification required.
  • Two Years of progressive food service supervision experience required including:
    • Cooking in an institutional setting catering sales and/or catering operations supervision of kitchen staff
    • Ordering of food, packaging and sanitation product
    • Inventory management


Physical Demands/Work Environment

This job operates primarily in an institutional food service kitchen. While performing the duties of this job, the employee is regularly required to stand and walk for up to 8 hours, read, speak, hear, stoop, bend, stand on a stool, use hands and fingers, and reach
with hands and arms, at times in a very warm and/or humid environment. It requires the ability to lift supplies, equipment, and files, open/close storage cabinets.

This job operates secondarily in an office environment and routinely uses standard office equipment. While performing office duties of this job, the employee is regularly required to speak and hear. The employee is frequently required to sit for extended periods of time, stand, walk, use hands and fingers, and reach with hands and arms. It requires the ability to lift files, open filing cabinets and bend or stand on a stool as necessary. Local travel may be required.

This position supervises the Food Service staff, Delivery staff, and the Receiver positions.
